Easy Bruschetta Recipe
As summer winds down and fall makes its beautiful entrance, we will leave you with this: a 5-minute recipe with just a few ingredients (so make sure they are good quality)! The most important part is finding good, local (if possible) tomatoes — they are the star of the show.
Easy Bruschetta Recipe
2 (good) tomatoes
6 leaves basil, torn or chopped
1/2 shallot, finely diced
1 clove of garlic, chopped
1-2 tbsp olive oil
1/2–1 tsp salt and black pepper (to taste)
1 baguette, cut into thin slices
Balsamic glaze and fresh mozzarella to serve
Preheat oven to 350º
Slice your tomatoes horizontally (between the top and bottom) with a serrated knife and rinse in a bowl of water, pulling to remove seeds. Dice tomatoes and add to a bowl with the rest of the ingredients, mixing and tasting to check for seasoning.
Brush bread slices lightly with olive oil and bake at 350º for 5-10 mins until crusty. Decorate toasts with bruschetta, drizzle with balsamic glaze, and add fresh mozzarella to top (if desired).
