Easy Vegan Pesto

1/2 c cashews or walnuts

1/4 c pine nuts or sunflower seeds

1 clove garlic

2 c basil, large stems removed

1 c spinach

2 tbsp lemon juice

1/4 c olive oil

1/2 tsp salt

1/2 tsp pepper

1 tsp nutritional yeast

1/4 c water or enough to reach desired consistency 

 

Blend all ingredients, adding more water as desired to reach desired consistency. Add more salt and pepper to taste and can add chili flakes for a little kick! I like to keep it lighter with the nutritional yeast but feel free to boost that as well.
