Sweet Chili Brussels Sprouts
This is one of the recipes that got my husband on team brussels sprouts. If you are not currently on team brussels sprouts, try this one out! The high temperature of the oven lets the brussels char just a little bit without overcooking the inside, avoiding that mushy texture everyone remembers and hates. The sweet chili sauce and roasted cashews really compliment the smoky earthiness of the brussels. All I am saying is give these brussels a chance!
Sweet Chili Brussels Sprouts
Makes 4-6 servings
1 lb brussels sprouts, rinsed, ends removed and cut into quarters lengthwise
2 tbsp high heat cooking oil
½ tsp salt
½ tsp black pepper
½ tsp garlic powder
½ c chopped cashews
1/3 c sweet chili sauce, more to taste
Dash rice wine vinegar, tamari/soy sauce, fresh cilantro to garnish
Sriracha or Sambal Olek to taste if you want to spice it up!
Preheat oven to 450º
Toss brussels sprouts quarters with oil and seasonings. Bake 10 minutes, remove from oven and add cashews, then bake for another 5 minutes. Remove from oven again to add sweet chili sauce and continue baking until edges of brussels sprouts get dark brown and crispy. Add a dash of rice wine vinegar, tamari, cilantro to your taste. Serve with sriracha or sambal olek if desired.
